Recipe Recommendations

Finger-Lime Sashimi
Ingredients: 300 g skinless Goldband snapper fillet 3 finger limes, to serve Dressing 1 tbsp soy sauce 1 tsp rice wine vinegar 2 tsp caster sugar
Method: Using a very sharp knife, thinly slice the snapper fillet against the grain into 5 mm- thick slices and refrigerate until ready to serve. Combine all the dressing ingredients in a bowl. Open up the finger limes and carefully squeeze out the jewels inside. Just before serving, toss the sliced fish in the dressing, then divide among plates and top with the finger lime jewels.

Oysters with Finger-Lime and Ginger Dressing
•100ml rice wine vinegar
•2 tbs rice bran oil
•1 tsp soy sauce
•1 tsp freshly grated ginger
•Juice of 1 lime
•Pinch of caster sugar
•24 freshly shucked oysters
•1 finger lime, halved lengthways, beads (vesicles) scooped out
•Whisk vinegar, oil, soy, ginger, lime juice and sugar in a bowl until sugar dissolves. Arrange oysters on a platter. Just before serving, spoon vinaigrette over the oysters and scatter with finger lime beads
